Sharpening Services
Sharpening
We provide professional and reliable sharpening of any kitchen knives (except ceramic) and various edged tools, such as scissors, straight razors, plane blades, chisels, axes, etc.
Remember the feeling of using your new knife for the first time? If your knife gets dull and you cannot sharpen it yourself, drop it off at the shop and have it ready to slice and dice in a few days! We use Japanese waterstones, with final finishing grit between 400 to 5,000 grit, determined by intended application and how well the knife steel can hold a highly refined edge . |
Traditional Japanese Single-Bevel Knives
This was a previously badly chipped Yanagiba in Silver #3 steel, cleaned up, repaired, sharpened, and cuts without you holding the knife. Thick knives will be thinned along the blade face accordingly. A hamaguri (clam shell) bevel will be maintained, so as to allow food to slide off the knife easily. Single-bevel knives sent to us are sharpened to 10,000 grit to enable the user to fully utilise the maximum potential of a one-sided 15 degree grind.

With our recently acquired 60" x 2" belt sander, we are able to repair major damage and also put a convex grind on your knife, if required. After that, the edge if finished on Japanese waterstones.
