Literally translate to "Mulberry Knife", the name originate from this knife being used to cutting very fine julienne, hairlike thickness, of Mulberry leaves to feed silk worm. Comparing to Slicing Knife, this is thinner and lighter, but it is also suitable for generally cutting tasks like chopping up some spring onions or onions etc.

It's main characteristic is having a large and wide blade face, this is especially suitable for cutting large amount of vegetables and melons. Cutting into thin slices or fine julienne strips, having adequate weight behind the thin edge allows faster downward repetitive cutting motion. Because of the thin edge, this knife is not suitable for chopping through bones even though it is big and heavy.
